Grade 1 sun-dried tomatoes naturally dried under the Aegean and Mediterranean sunshine from fresh, meaty, and aromatic field tomatoes.

Oval field tomatoes of the San Marzano and Rio Grande varieties cultivated on contracted lands are halved on hygienic tables and dried on white tarpaulins under the Aegean sun. Arriving at the plant, tomatoes are washed in rotating drum baths.
Conditioned to target moisture levels, tomatoes pass through optical laser sorters and manual inspection tables, sliced into strips (julienne) or diced, and sealed in vacuum bags.
Field Harvest & Sun-Drying
Harvesting ripe red tomatoes, halving, and natural sun-drying on food-grade sheets.
Washing & Salt Conditioning
Water-bath cleaning from dust, followed by precise salt and moisture balancing.
Sizing & Mechanical Cutting
Packaging as whole halves or precision mechanical cutting into strips and cubes.
X-Ray & Vacuum Packaging
Metal inspection, filling into vacuum barrier pouches, and refrigerated warehousing.
